Ingredients
- 1/2 cup butter
- OR 1/2 cup coconut milk
- 1/2 cup sugar
- 1/4 cup maple syrup
- OR 1/4 cup honey
- 2 eggs
- 3 overripe bananas
- 1 tsp vanilla
- 1 cup buttermilk
- 1 1/2 tsp bicarbonate of soda
- 1/2 cup rolled oats
- 1/2 cup plain flour (OR GF Flour)
- 1 cup wholemeal flour
- 1/2 cup pecans
- OR 1/2 cup walnuts
Method
- Prep Ingredients: Mash the bananas and chop the nuts. Set aside.
- Preheat oven to 180⁰C and grease a medium sized loaf pan.
- Cream butter, sugar, syrup, eggs, bananas & vanilla in a large bowl with an electric mixer.
- In a separate small bowl, dissolve bicarb soda in the buttermilk.
- Add that to the mix and stir gently to combine. Do not over-mix
- Gradually add in the oats and flour until well combined. Once mixed, stir through the chopped nuts.
- Pour mix into the greased loaf and bake for around 45-60mins, or until a skewer comes out clean.
- Slice into 12-14 slices.
- Enjoy warm or cold throughout the week! This loaf also freezes really well.
