Banana Bread

Ingredients

  • 1/2 cup butter
  • OR 1/2 cup coconut milk
  • 1/2 cup sugar
  • 1/4 cup maple syrup
  • OR 1/4 cup honey
  • 2 eggs
  • 3 overripe bananas
  • 1 tsp vanilla
  • 1 cup buttermilk
  • 1 1/2 tsp bicarbonate of soda
  • 1/2 cup rolled oats
  • 1/2 cup plain flour (OR GF Flour)
  • 1 cup wholemeal flour
  • 1/2 cup pecans
  • OR 1/2 cup walnuts

Method

  • Prep Ingredients: Mash the bananas and chop the nuts. Set aside.
  • Preheat oven to 180⁰C and grease a medium sized loaf pan.
  • Cream butter, sugar, syrup, eggs, bananas & vanilla in a large bowl with an electric mixer.
  • In a separate small bowl, dissolve bicarb soda in the buttermilk.
  • Add that to the mix and stir gently to combine. Do not over-mix
  • Gradually add in the oats and flour until well combined. Once mixed, stir through the chopped nuts.
  • Pour mix into the greased loaf and bake for around 45-60mins, or until a skewer comes out clean.
  • Slice into 12-14 slices.
  • Enjoy warm or cold throughout the week! This loaf also freezes really well.
