Black Bean Berry Brownie

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup honey
  • 100g dark chocolate (e.g. Lindt >70%)
  • 400g can black beans
  • 1 tsp baking powder
  • 2 eggs
  • 250g berries of your choice (e.g. Strawberries, Blueberries, Raspberries)

Method

  • Prep Ingredients: Drain and rinse the black beans. Slice the punnet of berries of your choice.
  • Preheat oven to 160°C. Line a square cake tine with baking paper.
  • Place Oil, Honey and Dark Chocolate in a microwave safe bowl. Heat for ~1-2 min, pausing every 30 seconds to stir the chocolate mixture. Once fully melted without any lumps, allow to cool slightly.
  • Blend black beans in a food processor. Add baking powder, eggs and chocolate mixture. Blend until combined and smooth.
  • Pour brownie mixure into prepared cake tine. Arrange berries on top.
  • Bake for 30 minutes or until skewer comes out clean.

Ensure Baking Powder is Gluten Free.

Dairy Free Alternative
Choose a dairy free dark chocolate.

Low FODMAP Alternative Use strawberries and substitute honey for maple syrup. Keep portion size to 1-2 small slices as large quantities of blackbeans and chocolate are high in FODMAPs.

Vegan Alternative
Choose a dairy free/vegan dark chocolate.  Substitute honey for maple/rice malt syrup.  Substitute eggs with egg replacements or flex eggs – Note: cooking time may vary with egg alternatives.
