Caramel Banana Nut Fudge


  • 5 tbsp smooth dark roasted peanut butter
  • OR 5 tbsp nut butter of your choice
  • 3 tsp coconut oil
  • 5 squares dark cooking chocolate (good quality)
  • 1 tsp pure maple syrup
  • 1 overripe banana
  • 1/2 tsp coarse grain sea salt (optional)


  • Melt the chocolate until smooth, either in the microwave or on the stovetop
  • Combine all ingredients in a food processor / blender until completely smooth
  • Line a pan or tupperware container with baking paper, and spread the mixture evenly. We suggest a 20x15cm pan or similar size, but it all depends on the thickness of your fudge (or how long you are willing to wait for it to freeze!)
  • Sprinkle sea salt across the mixture evenly if using, before placing in the freezer for a minimum of 30min or until set.
  • Slice and enjoy as a dessert, or pre-training snack!

Beware that these suckers melt quickly, so they are best kept in the freezer until you are ready to consume them!

Vegan/dairy-free-friendly: use vegan chocolate 🙂
