Carrot Cake Porridge

Ingredients

  • 1/2 large carrot
  • 1/2 cup rolled oats
  • 1/2 cup milk of your choice
  • 1/2 cup water
  • 2 tsp sultanas
  • 1 tsp chia seeds
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 3 walnuts (6 halves)
  • 1 tsp mixed seeds
  • 1/4 tsp nutmeg (optional)
  • 1 tsp sweetener of your choice (optional)

Method

  • Prep Ingredients: Grate carrot
  • Combine carrot, oats, spices, chia seeds, vanilla, milk & water in a large bowl (to avoid any overflowing mishaps!)
  • Cook on high in the microwave for 5-6mins until it is thick and creamy
  • Serve porridge in a bowl with a little extra cold milk if needed.
  • Top with sweetener of your choice, walnuts and seeds

To cook on the stovetop, combine carrot, oats, spices, chia seeds, vanilla, milk & water in a saucepan and simmer on low-medium heat for 5-10mins – stirring continuously to avoid any overflow or sticking!

Sweetener suggestions:
Maple syrup or honey.

Gluten-free adaptable:
Choose gluten-free oats or quinoa flakes.

FODMAP adaptable:
Choose a low FODMAP milk (e.g lactose-free).
Choose maple syrup instead of honey.
