Cauliflower Mash


  • 1kg Cauilflower – cut into small florets (about 1 head)
  • 3 cloves garlic
  • ⅓ cup natural greek yoghurt (or cream)
  • 1 x Tbsp olive oil
  • ⅓ cup parmesan cheese
  • Salt & Pepper, to taste


  • Place cauliflower and garlic into microwave safe dish with 1-2 tbsp of water. Cover and microwave on high for 3-5mins.
  • Drain cauliflower and process in a blender or food processor until smooth.
  • Add yoghurt, oil, cheese, seasoning and pulse until smooth, creamy and all combined.
  • Transfer to plates for serving according to serving size specified in plan.

THERMOMIX: Place cauliflower and garlic into thermie and pulse 3 times until fine. Add 2tbsp of water and cook at 100deg for 12mins, speed 2. Once done, add remaining ingredients and puree on speed 8 for 20secs.
