Ingredients
1 cauliflower (medium)
1 tbsp butter (for cooking)
1 onion (small)
1 tsp garlic (fresh or jar)
10 rasher bacon
1 cup ricotta
1 can diced tomatoes
2 tbsp tomato paste
2 1/2 cups cheese
1 tbsp basil and oregano (fresh or dried)

Method
Prep Ingredients: Dice the onion
Preheat oven to 180C and grease an oven pan.
To prepare cauliflower, remove stalk and split heads into small florets.
Steam cauliflower for around 10-15 minutes until just tender (you want it to be tender but still crisp)
Heat butter in a pan and cook onion and garlic until fragrant. Add bacon and crisp.
Add in ricotta, diced tomatoes, tomato paste and stir to combine. Add in half the cheese and mix through.
Add herbs and season with salt and pepper.
To construct, start with a layer of cauliflower, top with remaining sauce and cheese. Repeat layers.
Bake for approximately 30 minutes or until cheese lightly browned.
Cool before serving.
Lactose free adaptable: Use lactose free cheese to reduce the lactose content of this recipe. Cream and butter already have very little lactose so there’s no need to worry about them!
