Chia Coconut Pudding

Ingredients

  • 1/2 cup shredded coconut
  • 1/2 cup chia seeds
  • 1 1/2 cups coconut milk
  • 1 cup coconut water
  • OR 1 cup water
  • OR 1 cup 100% apple juice
  • OR 1 cup 100% pineapple juice
  • 1 tsp vanilla extract
  • 40g vanilla protein powder
  • 1 cup greek yoghurt
  • 1 cup mixed berries
  • 1 pinch of salt

Method

  • In a medium sized bowl, add coconut, chia, coconut milk, coconut water, vanilla, protein powder and salt to taste.
  • Mix until well combined.
  • Separate mixture into 4 jars/containers (or 2 containers if nutrition plan specifies 2 serves).
  • Place in the refrigerator and allow to soak for at least 2 hours (preferably overnight).
  • Serve topped with Greek or Coconut Yoghurt & Berries (& honey and/or banana if specified)

You can use fresh or frozen berries! The choice is yours!

For Low FODMAP:
Drizzle with maple syrup instead of honey

For LCHF:
Switch Greek Yoghurt for Coconut Yoghurt and use Coconut Water instead of juice.
