Egg & Salad Roll

Ingredients

  • 1 wholegrain roll
  • 1 egg
  • 1 slice cheese
  • 1/4 avocado
  • 1/4 carrot
  • 3 slices tomato
  • 2 slices beetroot
  • 4 slices cucumber
  • 1 tsp mayonnaise
  • OR 1 tsp hummus
  • sprinkle curry powder (optional)
  • salt
  • pepper
  • lettuce
  • OR baby spinach

Method

  • Prep Ingredients: Boil egg and grate carrot.
  • Peel boiled egg and place in a bowl. Mash with mayonnaise/hummus to combine and sprinkle with curry powder and season with salt & pepper.
  • Slice open roll and spread with avocado & hummus.
  • Top with egg, cheese and salads of choice
  • Enjoy! 

Gluten Free adaptable:
Switch bread roll for gluten free bread or wrap.

FODMAP adaptable:
Choose low FODMAP bread roll (e.g sourdough, gluten free).
Keep avocado to 1/8 per serve.
Use mayo instead of hummus.
