Fish in a Parcel


  • 2 pieces of baking paper (~40cm long)
  • 2 fresh or frozen fish fillets (size as per your nutrition plan) – Barramundi or snapper work well
  • 2 tsp of Olive oil
  • Pinch of salt
  • Possible Flavour combos: Lemon, Basil, Sweet chilli sauce and soy OR Thyme, lemon and leek OR Coriander, lime, chilli and spring onions OR Coconut milk, lime and sweet chilli OR Garlic, ginger and lemon
  • Salad or Veggies, to serve
  • Oven Roasted Wedges, to serve


  • Preheat oven to 200 deg.
  • Place a fish fillet in the centre of each piece of baking paper.
  • Drizzle each fillet with some olive oil and sprinkle with salt.
  • Next, add the ingredients from you chosen flavor combo.
  • Enclose the fish by folding the ends of the paper to the middle, then twist each open end shut.
  • Place on an oven tray and bake for 12-15mins until tender and cooked through.
  • Remove the fish from the bag and serve with veggies or salad.

Moderate – Higher Training Day:
Serve alongside some oven baked wedges (see ‘sides’ in Dinner recipes).

FODMAP adaptable:
Choose lemon, basil, sweet chilli and soy flavour combo.
Keep soy and sweet chilli to 1-2 tbsp each. Check ingredients for high FOMAP’s (eg. onion, garlic).
