Green Eggs


  • 2 x eggs
  • 50g lean ham, chopped , see notes for vegetarian option
  • 5g basil pesto, 1 tsp
  • 40g grain toast, 1 slice, OR toasted sourdough
  • ΒΌ avocado, OR 1-2tsp of butter/marg


  • Combine eggs, ham and pesto in a small bowl and whisk briefly to combine;
  • Grease a small fry pan and heat to a med-high heat;
  • Pour in egg mix and then slowly move mix around, scraping it gently off the bottom until eggs are just cooked through and scrambled.
  • Serve immediately on avocado toast.

Gluten free adaptable:
Choose gluten free bread.

FODMAP adaptable:
Choose low FODMAP bread (e.g spelt sourdough, gluten free).
Keep avocado to 1/8 per serve.
Keep pesto to 1/2 tsp per serve.

Vegetarian adaptable:
Omit ham from recipe. Substitute with cheese.
