Indonesian Fried Rice ‘Nasi Goreng’

Ingredients

  • 4 tbsp soy sauce
  • 1 1/2 tbsp honey
  • 2 tbsp tomato sauce
  • 1 tsp salt
  • 1 1/2 tbsp vegetable oil
  • 2 garlic cloves
  • 1 tsp red chilli
  • 1 cup diced brown onion
  • 5 eggs
  • 3 cups leftover cooked rice
  • 1 cup diced tomatoes
  • 3 cups iceberg lettuce
  • 1/2 cup spring onions

Method

  • Prep Ingredients: Crush the garlic cloves. Deseed the chilli and finely chop it. Shred the iceberg lettuce and chop the spring onions.
  • In a small bowl mix soy sauce, honey and tomato sauce with a fork
  • In a fry pan heat oil over med-high heat and add in onions, garlic and chili
  • Cook for about 3-5 minutes or until onions are translucent
  • Warm leftover rice in the microwave for 1-2 mins until gently heated through
  • Push the onions, garlic and chili to one side of the pan and crack in eggs and lightly cook to scramble them
  • Add in rice, tomatoes, lettuce, spring onions, salt and pour over sauce and toss.
  • Continually stir and cook for another 7-10 mins until everything is heated through

Vegan/Vegetarian Adapatable

Sub eggs with tofu or tempeh or beans
