Indonesian Fried Rice ‘Nasi Goreng’

Ingredients

  • 4 tbsp soy sauce
  • 1.5 tbsp of honey
  • 2 tbsp tomato sauce
  • 1 tsp of salt
  • 1.5 tbsp vegetable oil
  • 2 cloves garlic, crushed
  • 1 tsp of red chili, deseeded and finely chopped
  • 1 cup brown onion, diced
  • 5 eggs
  • 3 cups of leftover cooked rice
  • 1 cup of tomatoes, diced
  • 3 cups of iceberg lettuce, shredded
  • ½ cup of spring onions, chopped

Method

  • In a small bowl mix soy sauce, honey and tomato sauce with a fork
  • In a fry pan heat oil over med-high heat and add in onions, garlic and chili
  • Cook for about 3-5 minutes or until onions are translucent
  • Warm leftover rice in the microwave for 1-2 mins until gently heated through
  • Push the onions, garlic and chili to one side of the pan and crack in eggs and lightly cook to scramble them
  • Add in rice, tomatoes, lettuce, spring onions, salt and pour over sauce and toss.
  • Continually stir and cook for another 7-10 mins until everything is heated through
