Lentil and Sausage Skillet


  • 1 onion (small)
  • 1 carrot
  • 2 celery stalks
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 5 mushrooms
  • 2 zucchinis
  • 4 lean sausages
  • 400g canned lentils
  • 1 stock cube
  • OR 1 cup liquid stock
  • 700g passata (1 jar)
  • bay leaves
  • oregano
  • salt
  • pepper
  • Pasta, Rice or Zoodles according as specified in your program


  • Prep Ingredients: Thinly dice onion, carrot and celery stalks. Slice garlic cloves and mushrooms. Dice zucchinis, cut lean sausages into segments and drain lentils.
  • Add onion, carrot, celery and oil to a skillet and cook on high heat until veggies soften.
  • Add garlic, mushrooms and zucchinis and allow to cook for 2-3 minutes.
  • Layer in sausages and lentils and continue cooking for 2-3 minutes on high heat.
  • If using a stock cube, dissolve this in 250mLs of boiling water.
  • Pour stock and passata into the mixture, combining with bay leaves and oregano.
  • Continue cooking over moderate to high heat for 15-20 mins or until the sauce thickens.
  • Serve with pasta, rice or zoodles as specified in your program.

* Dissolve stock cube in 250ml of boiling water
