Ingredients
2 russet potatoes (medium)
1 cup cheese
1 rasher bacon (optional)
1 tbsp milk
250g lean beef mince
1 tsp ground cumin
OR 1 tsp spice of your choice
1 cup baby spinach
Method
Wash potato thoroughly, leaving the skin on. Pierce the skin 4 times with a fork and place on a microwave safe plate.
Microwave potato for 10 minutes, turning halfway through cooking.
In a pan, cook the bacon over medium to high heat once browned on both sides remove, chopping into rough pieces and set aside.
Add mince to the same pan, cook until brown, stirring through the ground cumin. Add spinach leaves and bring back to low, stirring through until wilted
Carefully remove the potato from the microwave and split down the middle. Scoop out the contents into a bowl and add half of the cheese, milk and bacon stir until combined, set aside
Scoop the mince mix into the potato and add the mashed potato mix to cover
Sprinkle each with the remaining cheese and finish under grill to melt cheese
