Ingredients
1 cup cashews
1 cup rolled oats
1 cup frozen mango
80g vanilla protein powder
1 tsp vanilla
10 medjool dates
3/4 cup desiccated coconut
2 tbsp coconut oil
1/3 cup macadamia nuts
extra desiccated coconut (for rolling)
Method
Prep Ingredients: Deseed the medjool dates, melt the coconut oil and finely chop the macadamia nuts.
Combine all ingredients (except macadamia nuts) into a food processor and blend until a mixture forms.
Add mixture to a bowl and stir through chopped macadamia nuts.
Roll mixture into balls (about a tsp in size) and coat with coconut.
Store in a container in the freezer.
Adaptations: Vegan, gluten free, dairy free, lactose free.
Choose an alternative protein powder for specific adaptation (e.g pea protein for vegan).
For gluten free, use gluten free oats or quinoa flakes.
