Marinated tofu and vegetable kebabs

Ingredients

  • 1 block firm marinated tofu (flavour of your choice)
  • 1 red onion (medium)
  • 2 zucchinis (small)
  • 1 punnet cherry tomatoes (200g)
  • 2 red capsicums (small)
  • Compeat salad

Method

  • Prep Ingredients: Cut tofu into cubes. Cut the medium red onion and 2 small red capsicums into large chunks. Cut the 2 small zucchinis into rounds.
  • Preheat oven to 180°C and line a tray with non- stick paper OR prepare the BBQ (depends on how you want to cook them).
  • Cut up vegetables and tofu. Thread onto skewers alternating between vegetables and tofu.
  • To cook on BBQ, cook for 10 mins each side or until browned/cooked through.
  • To cook in oven, place skewers on a tray and bake for approximately 20 minutes (turn over at half way) or until browned/cooked through.
  • Serve with Compeat salad.
