Method
- Prep Ingredients: Cut tofu into cubes. Cut the medium red onion and 2 small red capsicums into large chunks. Cut the 2 small zucchinis into rounds.
- Preheat oven to 180°C and line a tray with non- stick paper OR prepare the BBQ (depends on how you want to cook them).
- Cut up vegetables and tofu. Thread onto skewers alternating between vegetables and tofu.
- To cook on BBQ, cook for 10 mins each side or until browned/cooked through.
- To cook in oven, place skewers on a tray and bake for approximately 20 minutes (turn over at half way) or until browned/cooked through.
- Serve with Compeat salad.
