Ingredients
- 400g canned black beans
- OR 400g canned kidney beans
- 300g corn kernels
- 1 capsicum (medium)
- 1 cucumber (large)
- 3 tomatoes (medium)
- 1 avocado
- 2 garlic cloves
- 3 spring onions
- 1 lime
- 1 tbsp sweet chilli sauce
- 2 tbsp olive oil
- 1 tsp cumin seeds
- salt
- pepper
Method
- Prep Ingredients: Drain and rinse the beans. Juice and zest the lime.
- Chop the capsicum and spring onions, dice the tomatoes and avocado and slice the cucumber. Crush the 2 garlic cloves.
- Combine all ingredients in a bowl.
- Let stand at least 15 minutes for flavors to combine, then toss and serve.
