Mini Apple Puff Pies


  • 2 sheets of puff pastry (or gluten-free alternative)
  • 4 apples (medium)
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 2 tbsp lemon Juice
  • 1 lemon
  • 2 tbsp corn starch
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1 egg


  • Prep Ingredients: Cube the apples and zest the lemon.
  • Thaw puff pastry according to the package instructions
  • combine apples, sugar, vanilla extract, lemon juice, lemon zest, corn starch, cinnamon and nutmeg (in that order) into a bowl and stir until well combined.
  • Slice each sheet into 4 equal rectangular strips.
  • Fill half of each strip with the apple filling, leaving a 1cm border around the outside.
  • Folder the other half over and press the 2 together with a fork. Brush each pie with egg wash and sprinkle the top with sugar
  • Using a small sharp knife, make small slits on top of each pie.
  • Bake at 200°C for 20 minutes then set aside to cool.

Dairy-Free alternative: Use a dairy-free puff pastry.

Gluten-Free alternative: Use a gluten-free puff pastry.

Vegan alternative: Use a vegan-friendly puff pastry and egg was alternative. A good solution for the egg wash is to combine 2 tablespoons of milk alternative to 1 tablespoon of syrup (e.g. Agave). Whisk together until well combined and brush like a normal egg wash!
