Nutty Granola Crunch


  • 1 cup shredded coconut
  • OR 1 cup flaked coconut (the bigger chunks the better!)
  • 4 cups mixed nuts
  • 4 tbsp chia seeds
  • 1 tbsp flaxseeds
  • OR 1 tbsp linseeds
  • OR 1 tbsp LSA
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 tbsp sugar of your choice
  • 1/4 cup maple syrup
  • 3 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup pepitas
  • 1/4 cup sunflower seeds


  • Preheat oven to 170°C and line a large baking tray with baking paper.
  • In a large mixing bowl, combine the coconut, nuts, chia, flaxseeds, cinnamon, sugar and salt.
  • Place coconut oil in a small, microwave safe container and microwave for 30-60secs until melted. Add this, the syrup and vanilla to the dry ingredients and mix well.
  • Spread mix evenly over baking tray (feel free to use 2 trays if it isn't big enough). Bake for 20mins.
  • Remove from oven and stir through the remaining seeds
  • Increase heat to 180-190°C and return tray to oven for another 6-8 mins (watching carefully as to avoid any over-browning aka burning!).
  • Once cooked, remove from oven and let cool completely.
  • Store in an air-tight container - it should be right to keep for a few weeks (if you manage to resist it for that long!).

For our  nut mix we use a combination of; slivered almonds, whole almonds, walnuts and pecans!
