A fresh and delicious bowl that will be sure to please anyone! The best thing is being able to switch out any of the veggies for your favourites.

Ingredients
1 tbsp olive oil
1 carrot
1 small sweet potato
1/4 broccoli
1 cup shelled edamame
1 cucumber
1/4 red capsicum
300g peeled prawns or diced chicken breast
Rice, Rice Noodles or Quinoa
2 tbsp soy sauce
2 tsp maple syrup
1 tbsp rice wine vinegar
salt
pepper
Method
Whisk the soy sauce, maple syrup and rice wine vinegar is a medium bowl. Stir through the prawns or chicken, then set aside.
Pre-heat oven to 180c fan forced. Chop the sweet potato and carrot 1cm cubes. Spread on a lined baking tray and drizzle with olive oil. Season with salt and pepper and place in the oven for 25-30 minutes. Remove once golden brown.
Cook the rice, noodles or quinoa according to their instructions. Set aside.
While the veggies are baking and rice/noodles/quinoa cooking, chop the broccoli into rough pieces. Place it in a microwaveable container with the edamame. Cover with a lid slightly ajar or glad wrap. Microwave for 3 minutes. Remove the lid when removing from the microwave.
Heat some olive oil in a non-stick pan to a medium heat. Add the marinated prawns or chicken with all of the marinade. Cook for 5 minutes until heated through. Set aside.
Now for the fun part! Assembling. Lay out 2 bowls or containers. Start with splitting the rice between the bowls. Add the veggies and edamame. Finish off with the prawns and make sure you spoon out any extra marinade into the bowls for extra flavour!
