A vegetarian and vegan hearty spin on chili con carne with notes of chocolate & spice!

Ingredients
1 tbsp olive oil
1 onion
4 garlic cloves
2 capsicum
5 celery stalks
2 cups pumpkin
2 cans crushed tomatoes
2 cups water
OR 2 cups vegetable stock
1 can black beans
2 cans corn kernels
cheese (optional)
OR vegan cheese (optional)
OR sour cream (optional)
2 tsp chili powder
1 tsp cumin
1 tsp paprika
2 tsp dried oregano
1 tsp cinnamon
1/2 tbsp cocoa powder
1/8 tsp cayenne pepper (optional)

Method
Prep Ingredients: Peel and dice the pumpkin. Dice the onion, capsicum and celery stalks. Mince the garlic cloves. Drain and rinse the black beans and drain the corn kernels.
