Pumpkin Cocoa Chilli Con Carne

Ingredients

  • 1 tbsp olive oil
  • 1 onion
  • 4 garlic cloves
  • 2 capsicum
  • 5 celery stalks
  • 2 cups pumpkin
  • 2 cans crushed tomatoes
  • 2 cups water
  • OR 2 cups vegetable stock
  • 1 can black beans
  • 2 cans corn kernels
  • cheese (optional)
  • OR vegan cheese (optional)
  • OR sour cream (optional)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tsp dried oregano
  • 1 tsp cinnamon
  • 1/2 tbsp cocoa powder
  • 1/8 tsp cayenne pepper (optional)
  • salt
  • pepper

Method

  • Prep Ingredients: Peel and dice the pumpkin. Dice the onion, capsicum and celery stalks. Mince the garlic cloves. Drain and rinse the black beans and drain the corn kernels.
  • Drizzle olive oil in a large pot and sauté onion, garlic and spices for 5 minutes or until fragrant.
  • Add the rest of the vegetables and cook until for 10 minutes or until softened.
  • Add all canned ingredients and water/broth, and bring to a boil, then simmer for 25-30 minutes until pumpkin is softened
  • Serve as specified in your program or with avocado, a sprinkle of tasty cheese, vegan cheese or sour cream!
