Rice Cooker Pilaf


  • 1 x onion, chopped
  • 1 clove of garlic, crushed
  • Drizzle of Olive Oil
  • 1 cup of Basmati Rice (if using wild or brown rice, see notes)
  • 500g of protein, sliced into chunks (e.g. chicken or sausage works well)
  • 2 cups of chicken stock
  • 5-6 cups of frozen mixed veg
  • Flavourings of choice: 3tbsp of Sun-dried tomato pesto or basil pesto; OR 2tsp of curry paste; OR 1tsp of chilli flakes & 1-2 tsp of italian/greek seasoning


  • Optional Step: Heat rice cooker by switching to 'cook'. Add oil and fry off garlic and onion until fragrant the brown chosen protein. Switch back to the warm position.
  • Add all ingredients (except for any smaller/faster cooking veg), including your chosen flavours, to the rice cooker.
  • Turn to cook function.
  • After 10mins, remove the lid and give it a stir. Add the smaller/faster cooking veg.
  • Continue to cook until all of the stock is absorbed and the rice is tender.

If using brown or wild rice, this will need 1.5 – 2 x the amount of fluid, so for every 2 cups of stock, add an additional 1 cup of water.
