Smashed Chickpea Toast

Ingredients

  • 1/2 cup canned chickpeas
  • 1 1/2 tbsp greek yoghurt
  • OR 1 1/2 tbsp mayonnaise
  • 1/4 tsp mustard
  • 1/2 tsp lemon juice
  • 1/8 tsp onion/garlic powder
  • 1 tbsp chopped fresh herbs of your choice
  • salt
  • pepper
  • 2 slices bread

Method

  • Prep Ingredients: Drain the chickpeas.
  • In a small bowl microwave chickpeas for 30 seconds
  • Add in yoghurt, mustard, lemon juice, spices and herbs
  • Using a fork or potato masher mash all together, leaving some chickpeas half mashed
  • Season with salt and pepper
  • Serve on toast

Vegan Adaptable:

Sub yoghurt/mayonnaise for a non-dairy yoghurt or tahini

Herb Recommendations: Chives, spring onion, dill, or parsley!
