Smashed Chickpea Toast


  • 1/2 cup canned chickpeas, drained
  • 1.5 tbsp greek yoghurt or mayonnaise
  • 1/4 tsp mustard
  • 1/2 tsp lemon juice
  • 1/8 tsp of onion/garlic powder
  • 1 tbsp of chopped fresh herbs (chives, spring onion, dill, parsley)
  • salt & pepper to taste
  • 2 pieces of bread


  • In a small bowl microwave chickpeas for 30 seconds
  • Add in yoghurt, mustard, lemon juice, spices and herbs
  • Using a fork or potato masher mash all together, leaving some chickpeas half mashed
  • Season with salt and pepper
  • Serve on toast

Vegan Adaptable:

Sub yoghurt/mayonnaise for a non-dairy yoghurt or tahini
