Peanut Butter and Jam Overnight oats

Ingredients

  • 1/3 cup rolled oats (uncooked)
  • 1/3 cup milk of your choice
  • 1 tbsp chia seeds
  • 1 tbsp natural peanut butter
  • OR 1 tbsp almond butter
  • 1 tbsp jam
  • 1 tsp maple syrup
  • OR 1 tsp honey
  • fruit topping of your choice

Method

  • In a jar or small bowl, add in oats, milk, chia, nut butter, jam and syrup.
  • Stir to combine – but don’t worry if the peanut butter isn’t completely mixed in (as the swirls taste pretty delicious!).
  • Cover with a lid or cling wrap and set in the fridge overnight
  • The next day, top with your choice of fruit and enjoy!
  • Feel free to make a couple of batches, as the oats keep in the fridge for 2-3 days (as long as the milk expiry is within this).

HOT TIP: This is delicious made in an empty peanut butter jar!

 

Gluten-free adaptable:
*Use gluten-free oats or quinoa flakes.

FODMAP adaptable:
Choose Low FODMAP milk (e.g. lactose-free).
Use only small banana and maple syrup instead of honey.
