Ingredients
- 3 cups uncooked sticky rice
- 4 1/2 cups of water
- 3/4 cup coconut milk
- 1/4 cup raw sugar
- 1 tbsp lemon juice
- 3 tbsp maple syrup
- 1 1/2 tsp salt
- 170g chocolate chips
- 1 1/2 cups fresh strawberries
Method
- Combine rice, water and a dash of salt in a rice cooker and allow to cook
- Once cooked, transfer rice to a large bowl and add coconut milk, sugar and lemon juice
- Combine and add salt to taste
- Allow rice to cool then spread half onto a square baking tray and press mixture down
- Sprinkle chocolate chips and strawberries evenly over the rice
- Gently press the remaining rice over the strawberries and chocolate
- Allow to set in refrigerator then cut up and wrap
