Sundried Tomato Pasta Salad


  • 1 avocado
  • 1 cucumber
  • 1 green capsicum
  • OR 1 red capsicum
  • 1 stick celery
  • 1 can corn kernels
  • 1 can chickpeas
  • 500g tinned tuna (optional)
  • 1/3 cup sun-dried tomato pesto
  • 500g spiral pasta
  • OR 500g penne pasta


  • Prep Ingredients: Dice the avocado, capsicum, cucumber and celery stick.
  • Cook pasta as per directions and allow to cool.
  • Toss all remaining ingredients through cooled pasta then stir through pesto.

Vegan / Vegetarian Adaptation:
Simply omit the tuna – the chickpeas deliver a great hit of protein and fibre to fill you 🙂

Tuna Recommendation:
We recommend quality tinned tuna, so the tuna that comes in chunks. The brand Safcol works really well. 🙂
