Ingredients
10 dates
1/2 cup wholemeal self-raising flour
1 cup wholemeal all-purpose flour
1/2 medium sweet potato
1 tsp vanilla extract
1/4 cup olive oil
1/4 cup maple syrup
OR 1/4 cup honey
1 tsp cinnamon
2 eggs
2 tsp baking powder
3/4 tsp bicarb soda
1/4 tsp salt
Method
Prep Ingredients: Soak dates for 15 minutes in warm water. Meanwhile peel the sweet potato.
Pre-heat oven to 180 degrees fan-forced
Steam 1/2 peeled sweet potato until soft and tender (mash like consistency)
Soak the 10 dates in hot water
In a bowl, combine the flour, cinnamon and salt together
In a seperate bowl, combine the oil, vanilla extract, eggs and maple syrup
Remove the water from the dates
Once the sweet potato is cooked, place in a bowl with the soaked dates and combine well to a smooth consistency. It may be easier to use a blender or thermomix if you have one.
Combine the wet and dry ingredients together
Line a baking tin and pour the batter into the tin
Cook for 40 minutes or until a skewer inserted comes out clean
Allow to cool for at least 15 minutes.. then ENJOY!
Gluten-Free Alternative: Use GF flour and baking powder for a GF option
