Sweet Potato Slice


  • 1 onion (large)
  • 200g rindless bacon (optional)
  • 6 eggs
  • 1 cup self-raising flour (Can use GF alternative if needed)
  • 2 zucchinis (medium)
  • 1 sweet potato
  • 1/2 cup grated cheddar cheese
  • 125g feta (crumbled)
  • 60mL olive oil
  • herbs of your choice
  • salt
  • pepper


  • Prep Ingredients: Finely chop the onion and bacon. Grate the carrot and sweet potato. Sift the flour.
  • Preheat oven to 180°C. Grease and line a 30 x 20cm lamington/slice pan (microwave safe if using the microwave - see below)
  • Place all ingredients in a large bowl and mix well to combine. Season with salt and pepper and add herbs of your choice to taste.
  • Pour into the prepared pan and top with a light sprinkle of grated Parmesan cheese (optional).
  • Bake in oven for 40 - 45 minutes or until cooked through.
  • Cut into 8 (or 16) slices and serve with salad or steamed vegetables if for lunch or a side of salsa for snacks.

Cook in Microwave:

Making this while travelling and don’t have an oven? It can be cooked in the microwave!
Grease a microwave safe dish and instead of step 4, place the dish in the microwave (use an upturned plate to elevate it off the turntable slightly).
Cook, uncovered, on medium heat for 15 mins or until the edges are firm and the centre is only slightly wobbly.

Herb Suggestions:

We recommend chives, oregano, chill, basil or a combination! You can use fresh or dried, they all work well!
