Ingredients
- 2 tsp extra virgin olive oil
- 2 tbsp crushed garlic
- 400g garlic prawns
- 3 carrots
- 1 onion
- 1 capsicum
- 2 cups green beans
- 1 cup frozen peas
- brown rice
Method
- Dice the carrots, onion, and capsicum. Chop the ends off the green beans. Set aside.
- Heat the oil in a medium-large non-stick pan on a medium heat.
- Ad the onion & garlic. Stir for 2-3 mins, until golden.
- Add the prawns and the rest of the vegetables. Partially cover and stir occasionally.
- Cook for 10 minutes, until the prawns are hot and the vegetables are softening but still have some crunch. Serve with brown rice.
