1/2 cup red wine vinegar
1 tbsp salt
1 tsp crushed peppercorns
1 red onion
180g feta cheese
1 cup fresh mint leaves
extra virgin olive oil (make sure you get the good stuff!)
Prep Ingredients: Slice the red onion and cube the watermelon.
Combine 1/2 cup of water, 1/2 cup of red wine vinegar and salt in a sauce pan and bring to the boil.
Place onions in a glass mason jar or bowl with crushed peppercorns and and cover with hot vinegar mixture. Allow to cool then seal and refrigerate (this can be made in bulk to be used for other recipes as well)
Combine watermelon, feta, mint leaves and cooled pickled onion in a bowl. Serve with a drizzle of olive oil and black pepper.
*You can make this recipe without the pickled onions. Simply use regular sliced red onion to streamline the making of this salad.
