Zucchini, Corn & Haloumi Fritters

Ingredients

  • 1 zucchini
  • 1 eggplant
  • 1/2 brown onion
  • OR 1/2 red onion
  • 100g haloumi
  • OR 100g firm tofu (for vegan alternative)
  • 1 egg
  • 5 tbsp flour (50g)
  • OR almond meal
  • 1 tsp coriander
  • OR 1 tsp herbs of your choice
  • 125g canned corn kernels
  • 1 tsp pepper (optional)

Method

  • Prep Ingredients: Drain the tinned corn kernels and whisk egg.
  • In a food processer, chop the zucchini, eggplant and onion til fine (or grate manually).
  • Remove veggie mix from the processor and wring out extra water using a clean tea towel or strong paper towel. Set aside in a large bowl.
  • Place haloumi (or tofu) into the processor (no need to clean) and process until finely chopped (or grate manually). Add to bowl.
  • Stir through the egg, flour, herbs, pepper and corn to the veggie mix until well combined.
  • Next, take handfuls of mixture and form into balls. Place the balls into a well oiled fry pan on medium heat and squish into patties. Cook until golden and cooked through.
  • Serve as a breakfast, quick snack or lunch option.

Herb Suggestions: we use coriander and basil!

Egg free adaptation: replace egg with Orgran No Egg OR a ‘flax egg’ (1Tbsp ground flaxseed + 3Tbsp hot water)
